this drink was made from the successively refined boilings of the sugar-cane juice; and the word "bullion" occurs in English up to the 17th century as a corruption of the French bouillon, in reference to something "boiled" in modern French it still does, but in English bullion shifted its reference to "boiled metal").

The Rums from Jamaica

“Before the war the finest Jamaican Rums were those shipped to England for ageing in the bonded warehouses in London and were known as London Dock rums. The foggy, damp air of London is supposed to be responsible for their peculiar excellence. The exigencies of war interrupted the shipment and storage of these rums and when they may be available again I have no idea… these are all true liqueur rums with a mellow smoothness, bouquet and flavour comparable to fine old brandies. It really is sacrilegious to use any of them in a cocktail or mixed drink. They should be taken straight, the same as a Fine Champagne, am Armagnac or any fine old cordial.” (David Embury, The Fine Art of Mixing Drinks, 1965)
